Many surnames of today are originated, over the centuries, from the kind of work that was practiced by people in the past. The Folladors were a family who did some kind of manufacturing of the agricultural products, which are transformed into consumer goods. In the dialect of the region Veneto "follare l'uva" still today means to press grapes and produce wine. For many generations, the Folladors did this job over the hills of Valdobbiadene and I, Vittorio Follador, am one of the members of this family. Together with my son Luca and my daughters Maria and Marta, I carry on this tradition.
The Prosecco is a wine that was born more than a century ago among the hills of Valdobbiadene. It is produced through the white vinification of different varieties of grapes: Glera, Bianchetta, Perera, Verdiso, Chardonnay. Among these, the most important is Glera, which has to constitue 85% of cuvee. It gives the typical organoleptic features of Prosecco. The process starts from the primary vinification through which you can obtain a dry and still basic wine. Then, there is the "prise de mousse" with the Charmat method; it is the fermentation of the basic wine in an autoclave, which integrated the carbon dioxide, developed during the fermentation. Thanks to this process, the wine becomes Spumante. Then, there are the bottling stage and the quality controls by the relevant authorities. If everything is in order, the wine obtained (Spumante) can be declared "Prosecco" and it can be introduced into the market.
The "Follo" is an agricultural village in the area of Valdobbiadene, on the famous foothill of Cartizze. Our winery is situated there and also our fine vineyards as "Villa Luigia", are cultivated there. This village of old wine tradition expresses also the history and the culture of these lands, and it has become our company's brand since 2002.
